Homemade Tomato Soup: Grilled Cheese's Best Friend {Happy Grilled Cheese Day!}

Happy National Grilled Cheese Day!

A day to celebrate grilled cheese!? Oh yes, I'll take it! I love a good grilled cheese! They key--- it's all in the cheese you use! No cheap cheese or cheese-like product for me! Colby jack is my go to, but I also love mixing it up with pepper jack or making it Italian style with some mozzarella and/or provolone with some basil sprinkled on! Yum!

No matter what cheese I decide to go with, nothing pairs with a grilled cheese quite like a nice warm bowl of tomato soup. So, today I am resharing my delicious tomato soup recipe:

Homemade Tomato Soup



  • 1 can (28 oz.) diced tomato (I like to use the kind with green peppers to mix it up!)
  • 1 can (28 oz.) crushed tomato
  • 3 1/2 cups low sodium veggie broth
  • 2 Tablespoons diced onion
  • 2 cloves of garlic, diced
  • 1 teaspoon baking soda
  • 2 1/2 Tablespoons granulated (white) sugar
  • 4 Tablespoons butter
  • Italian Seasoning (Oregano, Basil, Garlic)
  • 1/8 tsp. fresh-ground black pepper
  • Parmesan Cheese (optional, but highly recommended)



  1.  Melt butter in large soup pot. Add onions and cook for just a few minutes.
  2.  Add all other ingredients. Bring mixture to a boil. I like to add in Parmesan cheese while it's cooking, this adds a great flavor that my family goes crazy for, but you can do without if you prefer.
  3.  Reduce heat and let simmer for at least an hour.
  4. Top with mozzarella or Parmesan cheese (if desired). Serve with grilled cheese.


I have been making this recipe for my family for 8 years and it is most certainly a huge hit! Even those who don't typically like tomato soup have expressed their love for this one! It's that good!
