Kids in the Kitchen: Make a MyPlate Pizza {An Easy Gluten-Free Mexican Style Pizza Recipe} #MyPlatePizza

Last month, I shared this fun post with you with tips on how to get your children to eat well... and more importantly, to ENJOY eating well! One of my favorite tips from that post was allowing your children to help. From the meal planning to grocery shopping and even cooking, letting kids take part is truly the best way to make eating healthy fun.

But kids in the KITCHEN!? Where do you even begin? What kid-friendly meals are not just simple, but also taste great?

In our household, it's all about PIZZA!



Pizza might not be the first food that comes to mind when you say healthy eating, but when you create your own pizzas you have the chance to take this classic kid friendly 'junk food' and put your own healthy spin on it. All you need is a whole grain crust + sauce + healthy toppings and you'll have the perfect MyPlate Pizza!

So, what makes a MyPlate Pizza a great choice for cooking with kids?


  • It's super easy...and quick too! Making a homemade pizza truly can be as easy as four simple steps- crust, sauce, toppings, bake... Sure, you can make your own crust if you'd prefer, but there are still plenty of options for premade crusts too...perfect for the youngest chefs. It also is a super quick option, making it ideal for post soccer practice dinner!
  • It's delicious! Seriously, who doesn't love pizza!? It's an all around favorite in our household!
  • It's versatile! In my family, there are a lot of special dietary needs to account for. My son and husband can and will eat just about anything, but I am a vegetarian and my daughter is gluten free. Meal planning in our home can be a little bit of a headache! With pizza, we can customize to suit all of our needs- heavy on the meats for my boys, just veggies for myself and a gluten free crust for my daughter.   • It's fun! Cooking with kids should be fun, and pizza is just that. With so many options, kids can go crazy with their masterpieces!


We were so inspired by the great ideas in the MyPlate Pizza Tip Sheet, that we could not wait to create a unique pizza all of our own! We decided to give it a fun spin and mix another favorite style of food to create a delicious gluten-free Mexican pizza! Delicious! Check it out:

Easy Gluten-Free Mexican Style Pizza


  • Corn Tortillas
  • Refried Beans
  • Salsa 
  • Shredded Cheese
  • Toppings: Avocado, Lettuce, Tomato, Sour Cream (optional)

  1. Preheat oven to 425 degrees.
  2. Spread a thin layer of refried beans onto your tortilla. Top with second tortilla and add another thin later of beans. (This will make your pizza a bit thicker and easier to eat, but be sure not to overload with the beans!)
  3. Now, spread a layer of your favorite salsa over the beans.
  4. Top with cheese. (I like a colby jack or cheddar, but use whatever you prefer!)

  5. Bake for 15 minutes or until cheese is melted and pizza cooked through.
  6. Top with your favorite taco toppings, if desired!
  7. Eat and enjoy!
