As the weather finally starts to warm, I find myself looking forward to getting our garden going...and more importantly, enjoying the harvest when that time comes. Today, I'm sharing one very simple way that I love to cook up our summer harvest...
Sautéed Vegetables & Feta with 100% Italian Extra Virgin Olive Oil
- Zucchini, diced
- Tomatoes, diced
- Onions, chopped
- Peppers, diced
- Garlic, minced
- 100% Italian Extra Virgin Olive Oil
- Feta Cheese
- Italian Seasoning (basil, oregano, etc)
- Heat olive oil in a large pan over medium heat.
- Sautee onions, peppers and garlic for a few minutes until onions are softened.
- Add in the zucchini, spices, salt and pepper to taste. Cook until zucchini is cooked.
- Add in tomatoes and cook an additional 2-3 minutes until tomatoes are cooked. Drain excess liquid if needed.
- Toss in feta cheese just before serving.
Not only does this recipe include some of my garden favorites, it's quick and delicious too. It's ideal for a side served with fish or chicken and a delicious risotta, but I also like to enjoy it on it's own for a simple lunch as well!

What exactly is Extra Virgin Olive Oil?

- Extra virgin olive oil is made by pressing olive oil without use of heat or chemicals. As a cold pressed oil it retains all of it's nutritional value.
- These oils are tested for peroxide value with lower values indicating a fresher oil and more rapid processing.
- They have an acidity below 0.8%. A too high percentage of fatty acid indicates improper production and rancidity.
- Oils are tested by trained, expert testers to check for taste defects and positive attributes of fruitiness, bitterness, and spiciness. Only those with the signature fruity taste and harmonious balance are given an Extra Virgin rating.
- Extra virgin olive oil is suitable for both cooking and baking thanks to it's high 400 degree smoking point.
- Between use, oil can be stored with lid tight somewhere dark and cool--- not on the counter, near the stove or in the fridge. It should be used within 6 months of opening.

ReplyDeleteThis looks so good and so simple to make. I would eat a plate of it or it would be great mixed with pasta. Olive oil I have found that the cheap are not good but I still have not found just the right one that fits my budget
