Fall Comfort Foods: A Super Simple Potato Soup Recipe

Back when I was still in high school, my mom created a special gift for my sisters and I: a family cookbook. In that first year, it was packed full of old family favorites from various members of our family--- like my grandpa's pumpkin pie or hartshorn cookies or my great grandma's dishpan cookies. Nearly every year since then, we have gotten a collection of recipes to add to that cookbook. Some have been additional recipes from friends and family, and others some that my mom had found here and there that she felt we would enjoy.

Several years ago, one of those additions included a delicious potato soup recipe that a lady at her bank had shared with her. She made it for us while we were visiting and it VERY quickly became a hit in my home. Over the years, I made a few adjustments here and there to make it the perfect simple potato soup that my family absolutely LOVES!

As the days become cooler and the leaves begin to fall, this potato soup is on repeat in my menu plan! Today, I'm sharing that recipe so that you can enjoy it with YOUR families too.

Super Simple Potato Soup



  • 3 cans (or equivalent) veggie or chicken broth (I use veggie to make it vegetarian friendly)
  • 1 package fat free country gravy mix 
  • 1 package frozen potatoes o'brien (potatoes with peppers mixed in)
  • 1 cup milk 
  • salt and pepper to taste
  • cheese


  1. Stir together the broth and gravy, bring to a boil.
  2. Add in potatoes and milk. Cook until potatoes are tender.
  3. Add in cheese, and stir until melted. This step is completely optional, but highly recommended. It really takes this soup to the next level... add as little or as much as desired to your taste. 
  4. Enjoy!
Like I said, this soup could not be more simple... or more delicious! It's the perfect meal to throw together on a busy weeknight, and tastes great the next day too... if it lasts that long anyway! I hope your family will enjoy it just as much as we have.

  7. You will need only a few basic cake decorating tools to decorate baked recipe for birthdays and any special holidays. Elaborate tools are not necessary for making simple cakes. Cake decorating for children's birthday cakes will call for the following equipment
